I'm not sure if it's just me, but sometimes when I'm stressed I love going to the supermarket and just browse the aisles dreaming about what I want to cook. The other day I stopped into the grocery on my way home from school and found myself in the spice aisle for a good 20 minutes. I'm not kidding. I ended up talking to a man who works there; he asked me what I was looking for, and I told him I was just having fun...he laughed at me! Ha. It was funny. He suggested I try one of these McCormick Recipe Inspiration spice packs...they were on sale, so I bought three: Quesadilla Casserole, the Country Herb Chicken and Dumplings, and the Chicken Tikka Masala. I really liked these, know why? It's just the spices! There's no added sugars or flours. Perfect for a Paleo meal (spices are really important on Whole30!). Anyway, I then picked up a tomato, red onion, lettuce, and a soft/hard taco shell kit for Eric. I also paired the meal with some salsa. When Eric asked what dinner was, I told him...it's a mix of quesadilla seasoning, taco shells, salsa, and cheese (for him); he responded with, "Oh, a Mexican Fiesta!" So, yes, that's what we had for dinner.


I browned a pound of beef with a teaspoon of coconut oil, threw in all the spices except the chili flakes; then I added some of the homemade chicken broth to make it saucy, instead of water--it adds more flavor. I had mine over a giant salad with tomato, avocado, onion, and salsa, and Eric had a mix of taco-burrito-quesadilla fiesta with cheese, tomato, salsa, onion, and lettuce. Is there any better way to start off the week than with a taco salad fiesta delight supreme? I think not.
