I have a breakfast problem. And it is this: I don't do breakfast. Which leads me to my second problem which is this: I go to the gym every morning. Gym plus no breakfast is not great for lot's of things- like energy, and metabolism. I don't know, those are kind of one in the same. Whatever. Point is I needed a breakfast idea. Sometime easy, breezey. Something I could make ahead of time that didn't require any heating up or preparing in the morning. These energy bites are my answer.
I edited this recipe down from the original. I know calories aren't everything, but I like to know 1. what I'm putting in my body and how much and 2. if it's necessary. The original recipe called for 1 cup of coconut, but that seemed like a lot. So I cut it in half- and I'm still a little unsure I love that much coconut flavor (I want to try cutting it down again and adding a little more oatmeal.) I also think next time I'll cut out half of the chocolate chips. The recipe is very very chocolate chippy. I made 30 bites tonight, the whole recipe clocked in at just over 2400 calories, which puts each bite at 85 calories. If I cut out half the chocolate chips they dip to 76 calories a bite.
Yummy and easy in the mornings. Score 2 for energy bites!
