Have you ever heard of Hello Dollies? Also known as six layer bars. They're amazing. I mean, honestly- take chocolate and bind it with sweetened condensed milk and how can you go wrong? Hello Dollies are built upon a base of graham cracker crust, but having just found an exceptional(ly easy) shortbread recipe and wanting to find variations on that theme, I decided to build my scaled down Hello Dollies on that. I cut the layers down to chocolate and coconut, no nuts. I call them Hello Lassies because of my Scottish shortbread recipe. Aren't I cute?
Shortbread:
4 sticks butter, cut into small pieces
4 cups all-purpose flour
1 1/3 cup sugar
Topping:
1 1/2 cups sweetened coconut
2 cups Milk Chocolate Chips
2 14 oz cans of condensed milk
Preheat the oven to 350 degrees F.
Foil line and butter 1 jelly roll pan (like this one from Wilton). Combine flour, sugar, and butter until the mixture is uniform. It will be crumbly. Press the shortbread mixture into prepared pan and bake until golden brown around the edges, about 20 minutes. Remove from the oven.
Layer the coconut and chocolate chips over the shortbread, and then pour the condensed milk so it covers all of the sweet mess below. Bake for half an hour at 350.
Mmm this sounds exceptionally wonderful!
